Sustainability is not one badge. It is the long-term health of soil, water, biodiversity, farms, processing systems, communities and the economics that allow good coffee to exist again next harvest.

Coffee sustainability becomes useful only when it survives contact with a real farm: soil, water, biodiversity, weather, labor, processing infrastructure, producer income and the ability to invest again.

A practice can improve one part of the system while creating pressure somewhere else. A low-water process may demand more drying space and labor. More shade can provide habitat and microclimate benefits but also changes agronomic management. A certification may verify meaningful requirements while still leaving questions about profitability or local context unanswered.

The strongest definition is therefore not “coffee with the right logo.” It is a production and value system able to protect environmental health, human wellbeing and economic viability over time.

A practical framework

Regenerative coffee starts by looking at the whole farm

The 2025 ICAFE–CATIE practical guide to sustainable and regenerative coffee organizes farm diagnosis across eight dimensions: soil, agronomic practices, water, biodiversity, microclimate, economics, social conditions and policy/governance. The logic is powerful because it makes trade-offs visible.

Nordico uses this whole-system logic because it prevents a common marketing error: taking one positive attribute and letting it stand in for everything. Shade-grown does not automatically answer the water question. Organic does not automatically answer the producer-income question. A low-emissions mill does not automatically tell us how the soil is being managed.

Costa Rica's climate program

What does “Low in Emissions” actually mean?

For the English-speaking market, the customer-facing label is Low in Emissions. It is connected to Costa Rica’s NAMA Café work and to an ICAFE distinction for qualifying roasted coffee. ICAFE describes the program around traceability at farm and beneficio level plus actions intended to reduce greenhouse-gas emissions.

NAMA Café focuses on both farms and coffee processing because important emissions occur in both places. The official program highlights measures such as more efficient fertilizer use, agroforestry and carbon storage, lower-water processing technologies, aerobic wastewater treatment, and productive use of organic residues such as pulp and parchment where appropriate.

LOW IN EMISSIONSNot the same as “zero emissions”

The distinction communicates verified participation and defined low-emissions practices under the Costa Rican framework. It should not be casually rewritten as carbon neutral, zero impact or “the most sustainable coffee.” Those are different claims.

Beyond impact reduction

Regenerative coffee asks whether the system can become healthier, not merely less harmful

Sustainability often begins with reducing damage: less waste, lower emissions, better water management, safer inputs. Regenerative agriculture pushes the question further. Can soil function improve? Can water be retained and protected? Can biodiversity and microclimate become more resilient? Can the farm remain productive and economically worthwhile for the people who depend on it?

That does not create one universal “regenerative recipe.” The ICAFE–CATIE framework treats regeneration as a progressive farm-specific transition. A producer diagnoses the existing system, identifies priorities and chooses practices that fit the farm rather than copying a fashionable checklist.

Across Costa Rica, coffee is often grown by families who have watched the same slopes through many harvests. That accumulated knowledge can be extraordinarily specific: where water sits after heavy rain, which blocks flower first, where wind dries the soil, how one shade tree affects another crop, or how a variety behaves at a particular elevation.

The ICAFE 2026 manual repeatedly connects coffee quality to region, altitude, soil, climate, shade, varieties and producer decisions. In practice, those variables meet in the farmer’s memory. A family may refine decisions about variety selection, shade-tree mix, soil enrichment, pest management, harvest timing, fermentation, drying surfaces, raised beds, greenhouse protection and sun/shade exposure over years.

Water and coffee pulp are not side issues — they are part of the production system

Wet processing can create wastewater with a high organic load. Coffee pulp, parchment and other residues also have to go somewhere. Costa Rica’s NAMA Café framework therefore includes processing technologies, water-use reduction, wastewater treatment and opportunities to recover energy or value from organic residues.

A responsible beneficio does not simply move the environmental burden out of sight. It asks how much water is used, what happens to process water, whether methane is being generated, how solids are handled and whether residues can safely become compost, energy or another useful input.

Agroforestry

Shade trees can do several jobs — which is why “shade-grown” is too simple a description

Coffee agroforestry can contribute habitat, carbon storage, soil protection and microclimate regulation while also producing fruit, timber or other farm value. CATIE research in Central America has spent decades examining those ecosystem services and their trade-offs.

But shade is management, not decoration. Species, density, pruning and local climate matter. Too little shade can increase heat and water stress; too much or poorly managed shade can affect productivity, humidity and disease pressure. The question is not “shade or no shade?” It is what agroforestry structure works for this site and what services is it intended to provide?

Labels and reality

Certification can create trust — but no certificate measures every dimension of sustainability

Nordico generally sees value in independent verification because defined standards can make claims more credible. The mistake is treating one certificate as a complete proxy for a living agricultural system.

Organic certification, for example, answers a defined set of questions about production practices and inputs. It does not automatically tell the customer what the producer was paid, how profitable the farm is, how much biodiversity exists on a specific block, or whether certification cost makes commercial sense for a small producer.

Conversely, a small farm without a familiar consumer-facing logo should not automatically be assumed unsustainable. Some producers use low-input, diverse or highly careful systems yet decide that a particular certification does not justify its cost or administrative burden. Specific claims about a farm should still be verified rather than romanticized.

The part sustainability marketing often skips

A farm that cannot afford another harvest is not sustainable

Environmental improvement takes money, labor, knowledge and time. Shade management, soil work, better wastewater systems, selective harvesting, raised beds, monitoring and climate adaptation all require resources. If coffee prices do not allow the producer to maintain the farm and invest, the sustainability plan eventually loses its economic base.

This is where specialty coffee can create an opportunity — but not a guarantee. Traceability and differentiated quality can make more attributes visible and potentially create more market value. Whether that value reaches the producer depends on the actual commercial relationship.

Buying coffee is also voting for a production model.

That statement should not become a lazy “small good, industrial bad” story. Large farms can run excellent environmental systems; small farms can make poor decisions. The point is that every purchasing system rewards something. When the only visible metric is the lowest unit cost, other values become easier to externalize. When quality, origin, resilience and producer relationships are visible, buyers have more dimensions on which to make a decision.

What should you look for when a coffee claims to be sustainable?

  1. Specificity. Does the company explain actual practices or only use broad words such as “eco-friendly”?
  2. Traceability. Can you identify the producer, cooperative, beneficio or at least the origin and system behind the claim?
  3. Evidence. If a certification or official distinction is named, is it current and connected to a defined standard?
  4. Whole-system thinking. Are soil, water, biodiversity, climate, people and economics considered together?
  5. Humility. Serious sustainability communication admits trade-offs and avoids claiming that one coffee has solved every problem.
