This discovery set brings together three coffees from the Jiménez family and EcoBeneficio Jiménez in Costa Rica’s Los Santos region. The origin remains constant while the processing changes, making the set a clear and enjoyable way to taste how post-harvest decisions reshape the cup.
Caragral Natural emphasizes fruit and round sweetness. La Macha Black Honey builds concentrated sugar character and texture. El Yoz Anaerobic Washed combines expressive fermentation with the clean finish of a washed coffee.
Why the cups differ
One region, three processing expressions
Natural processing dries the coffee cherry whole, building fruit intensity and body. Black Honey retains a high proportion of mucilage during drying, concentrating sweetness and texture.
El Yoz is fermented with very limited oxygen and then fully washed, creating an expressive but precise profile. Together, the three coffees turn processing from an abstract idea into something you can taste side by side.
